Description

These no-bake Strawberry Shortcake Ice Cream Sandwiches are the ultimate frozen treat for summer! Featuring creamy strawberry ice cream, buttery sugar cookies, white chocolate, and a crunchy graham-strawberry coating, they’re easy to make and perfect for any occasion.


Ingredients

  • 1 pint (475 g) strawberry ice cream
  • 6 sugar cookies
  • ½ cup (40 g) crushed graham crackers
  • ½ cup (100 g) crushed freeze-dried strawberries
  • 1½ cups (260 g) white chocolate chips
  • 1½ tablespoons coconut oil

Instructions

  1. Slice the Ice Cream:
    Using a serrated knife, cut the pint of strawberry ice cream into 3 equal discs, crosswise.

  2. Assemble Sandwiches:
    Place 3 sugar cookies on a tray. Top each with an ice cream disc, then another cookie. Gently press and remove packaging. Freeze for 30 minutes.

  3. Make Crunch Coating:
    In a small bowl, combine crushed graham crackers and freeze-dried strawberries. Stir well.

  4. Melt White Chocolate:
    In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth. Let cool for 5 minutes.

  5. Coat Sandwiches:
    Dip half of each frozen sandwich into the melted white chocolate. Immediately roll the dipped part in the strawberry-graham mixture.

  6. Freeze Again:
    Return coated sandwiches to the freezer for 30 more minutes before serving.

  7. Serve & Enjoy!
    Serve cold and enjoy immediately, or store in the freezer for up to 2 weeks.
