Ingredients
- 1 pint (475 g) strawberry ice cream
- 6 sugar cookies
- ½ cup (40 g) crushed graham crackers
- ½ cup (100 g) crushed freeze-dried strawberries
- 1½ cups (260 g) white chocolate chips
- 1½ tablespoons coconut oil
Instructions

Slice the Ice Cream:
Using a serrated knife, cut the pint of strawberry ice cream into 3 equal discs, crosswise. -
Assemble Sandwiches:
Place 3 sugar cookies on a tray. Top each with an ice cream disc, then another cookie. Gently press and remove packaging. Freeze for 30 minutes. -
Make Crunch Coating:
In a small bowl, combine crushed graham crackers and freeze-dried strawberries. Stir well. -
Melt White Chocolate:
In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth. Let cool for 5 minutes. -
Coat Sandwiches:
Dip half of each frozen sandwich into the melted white chocolate. Immediately roll the dipped part in the strawberry-graham mixture. -
Freeze Again:
Return coated sandwiches to the freezer for 30 more minutes before serving. -
Serve & Enjoy!
Serve cold and enjoy immediately, or store in the freezer for up to 2 weeks.
